Okay, did some math. Looks like 295/75/17 is a winner size if you can find anything in that size..lol That's 11.6" wide which is enough to be beefy and 34.4" tall so essentially shy of 35"

I once put a set of N50's (12.65" wide) on a set of 7" Chrysler ralleys and tucked them under a 68 Coronet

Yeah, the tire manufacturer will give you a chart with recommended rim size for their tires.
For example, the BFG All/terrain KO in a 17" with a 8" wheel, the largest recommended tire is a 285/70R17/E

Like pyro said, they'll cup. I'm sure you want to get the longest use out of your tires. I asked my dad (selling tires 30+ years and ohios largest distributor) and he said he wouldn't go wider than a 265.
The width isn't really going to play that much into the look. Like i said earlier, you have a 35" tire on 17s the sidewall and tread are going to make them look beefy.

265/70/17 on stock with no lift except a 2" leveling kit on a 2500 will look dinky, thats what I am running and they look real small, just bought them for mine. I had 315/70/17 and they looked real good, just can not afford the coin to get the 315's back. As for 315/70/17 on an 8" rim....I had no troubles at all and took them for some extream off-road with around 10psi in them all the time.
