If memory serves me right, I just put the gasket back in without the thermostat. I drove 500 miles without the thermostat and also without the combo fan shroud/overflow installed. I ran the overflow hose into a glass bottle and would simply pour it back in after things cooled off. I also ran with half the radiator blocked off by cardboard, because I wanted it to run slightly hot. Long story, but I needed the coolant pressure higher than normal as I was "chemically" fixing a slight HG leak. It worked. That was over 5 years ago.
