2008 2.7 was leaking oil and had a injector acting up. Repair guy was changing the gaskets out and saw this, suggested I may need a new engine.

I paid for regular oil changes, but this makes me wonder if they actually happened.

Well, I cant comment on if you need a new engine or not. But I can say, I will keep on doing my own oil changes...lol. You don't mention how many miles. If it runs good, button it back up and keep on driving it.

Penz regular then switch to synthetic a few years ago.
Looks like the sludge problem is a defect:

Interesting....... So, maybe an external oil cooler, additional filter, to add some capacity (and better cooling) to the system might be in order?
