With a good cooling sytem the 180 would be the best bet. I run the 180 and have always had good temps both cruisin and in stop n go traffic.

I also use the 180 thermostat and even without a shroud I stay cool in stop and go traffic. I do have a huge custom core in my radiator.

I have always heard run 10-20 degree cooler T-stat then you want to run. THis can cause a problem if you drive a lot in the winter, as it will take a long time to warm up, but I have never been over 185 since going tot he 160 stat.

I have had luck with using a restrictor ring only, easy way is to gut your thermostat poppet type (balance sleeve design to big) temps good year round in this area So.Ca. 28-115 degrees ambeint, and no innerds left to ever cause problems, most RB's want 1 1/2" or so LA's seem to like 1" drag race car LA uses .875 and runs 190 or so @ stage 215-220 at timing shack 200 or so on return road. If you've nothing better to do you may spend some time with various sizes untill you have your own idea of temp.perfection! It took 3 times to get my V-10 Ram3500 to where it's a happy medium.
