Take out the spare tire, jack, the junk you store in the trunk that you NEVER use, run 1/2 tank or less of gas, take out the rear seat and passenger seat. Empty the glove compartment. You can also rip out the carpet and floor mats and parts of the dash as well and the sun visors. While you're at it do the headliner and door panels.
Go on a diet. Had to do it to fit in the SRT-4 seats.......

don't forget about removing the stereo and any equipment that might be related to it, including all of your speakers. Passenger seat could come out. If the car isn't going to be driven on the roads, you could remove your rear bumper, but that would only be for a drag strip -- removing your rear bumper wouldn't be legal for street driving.

Yeah, carbon fiber is great for reducing weight. The trouble is that it costs so much. Do the math on HP gained for each upgrade versus the cost. Also keep in mind your power-to-weight ratio. That is great indicator of how fast your vehicle will be compared to another. Don't forget to figure in the driver's experience, reaction time, weather, etc.......

weight reduction is more of a type of thing where your sacrificing your comfort for better speed. All the small things we enjoy take up weight, and all that weight truely adds up. There are some things we can do without, but the majority of things a daily driver wouldnt want to get rid of. So i might, if i were you, do a switch up on the hood for a new one, and a new trunk (i have seen some fiberglass and CF ones) that also depends on how far you want to go.
As i said before, its balancing your comfort for gain. If your going for a pure racer, go with everything dusty has sad cuz its a really good complete list. If you are running a daily driver dont do something you'll regret later on.
