Tire/wheel size options for '96 2500

I'm looking to put new shoes on my mostly stock '96 2500 4x4 CTD. Presently running the stock size 245's, but would like to jump to 285/75-16's if possible. To do this, I've got to replace the stock wheels to get more rim width. I'm a fan of good ol' black steel wheels... both cost and appearance. Something like these in 16x8?
So, my questions are:
1) Will 285/75-16's run OK without rubbing, or should I make a smaller jump to 265's?
2) What backspacing/offset do I need to look for in the wheels? Or is this a fairly non-significant concern?
3) Any comments on load capacity with the steel wheels vs forged/cast alloy options?
