I'm a new owner too and I checked with the dealer about the temp as well. Mine runs up to 220 in traffic and oil temp gets over 200. According to the Palmour Dodge in Alpharetta Ga. which is one of the largest sellers of Vipers, the Viper specialist told me this is totally normal. I also checked in the owners manual and these temps are in the normal operating range. Like you, I am accustom to the temp gage moving up till the thermostat opens at 180 and the gage needle staying there. Years ago I heard that manufacturers put in over heat lights instead of gages for similar reasons. The Viper Tech told me to drive it an not worry about gas mileage and that this motor has to break-in. He had nothing but praise for the trucks. Good luck with yours!

As mentioned above...those are normal operating temps for around town driving on a warm day. Water temp runs 200-220 depending your driving habits/conditions. Under full heat soak, you actually lose hp on these engines. You can reduce the operating temps by:
Flashing the PCM to turn the fan on earlier and running a 172' t-stat
Put on a set of 3" mids with HF Cats
Put on a set of thermo coated headers
drain 2 gallons of anitfreeze, fill with distilled water and a bottle of purple ice.
