HVAC issues

another question.... going by the pressures on my gauge set there is the right amount of Freon in the system. this thing used to freeze us out of it.
During the 7 years I have owned it I have replaced the compressor, the filter/dryer, the front expansion valve and the condenser. Not all at once.
This thing had sat a while with the AC system open last year for a couple months while I dealt with engine issues, the condenser was unhooked and out of the truck for cherry picker access. so the system was open during this time. (forget about the blinking LEDS "just for a minute" here. If the filter/ dryer dessicant were saturated would that cause so-so cooling? I did vacuum the system down overnight once the engine was back in and everything was all back together but I have heard that if the dryer was saturated it wont cool efficiently. Is that true?
Besides that what would be signs/ symptoms of a bad dryer? I could replace for not a lot of money I know...…

I had always thought that pulling a vacuum on the system would boil any moisture out....... Of course, unless you vacuum it down a bit more, that moisture is still going to be in there?? Maybe??
Think I would verify everything else was working properly before replacing any more parts though.
