I was told it would fit but not hold up to the V8.

The NV3500 was used in some years with the 3.9. What transmission are you referring too?

The NV3500 was used with the 5.2 (and 4.7).

As long as you don't work the crap out of it the 42re can hold up to the 5.2. I've been talking with a guy in my parents town that did a 3.9 to the 5.2 swap about 4 years ago and is still using the v6 tranny and its still working good for him.

i like to do some serious offroading ever once on awhile so it might be wise to go with the nv3500

"ANY transmission" is kind of vague.

Find an NV3500. It did come with the 3.9 and yes, it was used with the 5.2 and 4.7 too. You shouldn't have any problems with it.
