Quick question: I've been thinking do we really need a 185* t stat for the SCT tuner? Would leaving the factory 195* hurt anything?....reason being I've been getting some really crappy mileage with my truck, 30 miles and I burned up a 1/8 tank of gas, driving normal no heavy throttle....I was figuring with the truck reading the engine being cold that it would dump for fuel into the cylinder. Is my hypothesis wrong?
If the engine is dumping fuel it usually throws a code. You could email Sean about it and see what he says. You're getting 10 mpg....dunno what your driving conditions are, but if that's in town that's pretty good.
Sean had told me it was necessary. BUT, I'm running a 195* to have better heat. The only problem is that I have to run 93 gas with the 87 tune. If I don't it'll detonate. I tried the 89 tune and 93 gas but it would still detonate with the 195* stat.
With a 180* stat I could run 89 tune and 93 gas. But, I still couldn't run 93 tune and 93 gas without getting detonation.

I put a 180°F Stant in mine... the ECM sees the engine temp as 186°F (read from a scanner), and it doesn't throw codes.
Whilst my MPG's got a little worse, this I believe is attributed to the other mods I did at that time, not the T'stat change.

Our 7-day forecast is calling for temps in the 60s and 70s up to the 30th, and then on the 31st the bottom falls out with an expected high of 49° with a 70% chance of snow. But then, that will change daily, which is par for the course in this area this time of year.
