O2 sensors won't necessarily throw a code. Depends on just how they fail. If they are still sending a signal to the PCM, the PCM doesn't know if it is accurate or not.... PCM only cares if the signal is either NOT there, or, way out of range, or, doesn't "look" right. (not switching rich/lean, etc.) Good test for those is to simply unplug the pre-cat O2 sensors, and take the truck for a drive. That WILL set a code, but, if the truck drives better..... There ya go.
If all your ignition parts are new, and you are STILL running rough.... I would take a long hard look at the plenum, fuel pressure, and possibly the injectors. (start with the easy stuff.... dig deeper if you don't find anything.)
Compression test wouldn't be a bad plan either.

Unplug the O2 sensor, and take it for a ride. Connector is up above the trans, easiest to get to from drivers side, just follow the wires up to the connector.
gonna need a fuel pressure gauge... might be able to rent/borrow one from an auto parts store... I am not entirely sure what pressure on yours is supposed to be... I have heard anywhere from 35, to 49 PSI at idle......
Check those, see what ya find.
