Good Mufflers
I used to think that same thing when I had a stock cat. As soon as I got a high flow cat the snapping/popping noise above about 2000rpm got on my nerves.
I have all the original cats (California set up) and went with the Flowmaster 40 series. It sounded no better than the OEM. I changed it out with the Flowmaster 10 series. It sounds pretty sweet now. I still don't get the overly agressive sound all yall can get with high flow or no cat at all.
Shorty headers, Magnaflow cat, Thrush glass pack and duals that split right behind the glass pack.
The roller rockers and airgap changed the tone of the exhaust a bit too though.
Keep in mind that this is on a 5.2 and the 5.9 exhaust tone is a little different.

I agree with Hans5.2. You should get the AT3030 loud and deep. I have it dumped right before the rear axle...I've had Flowmaster Super 40, Flowmaster Original 40, Glasspack and CherryBomb Extreme and imo the at3030 is the best by far.
