Why'd you replace the cat? Because it was clogged? You know why it was clogged? Read the contents of that link again and then proceed to pull off your throttle body and check for pooled oil.

O2 sensors should also be replaced if they haven't been already...NTK or NGK brand

I only get like 210 miles to a tank and I do the math how much gas I put in and how far I went, I get like 8.5 or 9 no matter if I drive like a grandma or in NASCAR the truck has no loss of power by no means

No loss of power? Impossible. 8MPG? Only if you're towing. There has gotta be a difference in MPG if you keep your foot out of it.

Bad o2 sensors as a result of a blown plenum. Power loss might set in when your new cat clogs from a blown plenum.

my front brakes are new replace calipers rotors and pads but haven't checked rear drums

what are you talking about? project rust bucket has a 5.9 and is has gotten 27mpg which is pretty good for a truck without overdrive or a lock up torque converter. project rust bucket can also put out 972rwhp.
