I had a 98 1500 with a V8 and it did the exact same thing you have described and I tried the exact same things all these fine folks have suggested and what was the real demon was the pickup unit in the distributor, I replaced it and I didn't have another issue, other than the rest of the truck was just wore out.. Trust me it is a cheap fix and takes less than an hour and I bet it will solve your dying issue.

Change all sensor , pickip coil and truck runs awsome about made 70-80mile in 2weeks cuz where i live its a small island, but dang truck shuts off again, pickup coil brand was a standard brand from rockauto.com

I'm ordering the IAC today and seeing if it is that. It's been getting worse lately.
Just recently my trucks idle would drop and die when I came to a stop Tested the tps and i was good took out the Iac and looked terrible. I replaced it as well as cleaned out my Tb and the truck wouldn't die at a stop but would take a little while to get started. Went back to the store and swapped for a new sensor and everything works perfect now!
When you replace the Iac un hook your battery while you do it so the pcm resets, and also clean off your tb really good. Also make sure you have a gasket between your tb ( its like $2 for a new one) and intake or just use rtv. Good luck
