Tire shop will know what offset you need.
I'm running 33x12.5 on my 99 Dakota with no lift. Just a tb crank.
Minor rubbing on Front insides when turning to lock.
3" BL and offset wheels should fix that fine.
Your fullsize with a 3" lift should fit 35's but be prepared for hits.
I say put the tires you want on. Fix the issues later.

so my truck has the factory lvl kit, and I am running 315/75/16 grabbers with wheels that have a +10 offset. my wheels with that off set were fine with the 285s I had, but with the grabbers they rub the control arms when at full lock either way, and if you are turning and hit a bump they tend to rub the back side of the wheel well. according to my local tire shop, my tires require a wheel with at least a -3 offset. so my wheels might be up for sale soon if anyone is looking so I would probably lift a little more to stop the rubs
