Stick with stock temp. Lower t-stat just makes it take longer to get up to operating temp, meaning it's less efficient.

??? Takes shorter amount of time because it's 20* colder. I've been running one for years with no issues.

A lower temp thermostat will help cool the cylinder temps down and allow for increased timing without detonation, however the factory program expects higher cylinder temps for a more complete burn. If your thermostat opens earlier, your PCM may think you're always in warmup mode - running extra rich until operating temp is reached.

It will throw a code also if it doesn't get up to operating temp. It will stay in open loop also. A 180* is above the cut off temp so you are ok. I have a black truck stuck in traffic with the ac on high with a ambient temp of 95* in mid day sun i'm glad i have the 180* stat

I have no issues with 180° either... the engine warms up at the same rate, it just gets to 180° and opens a tad sooner than if it had to continue to 190°.
At 180° it does take a little longer to heat the whole cab on a cold day, but it still does to an acceptable level... it's not like you'll be sitting in your cab in a speedo in the middle of winter, you're appropriately clothed for cold weather.

And as Moparite states, I'm much happier on a hot day.
