Well most shops and manufacturers go by the 2 years or 30,000 miles rule.
But I have seen cars in my family go for years and years on the same fluid. (maybe thats why my grandfather goes through silveradoes like he does...)
I am not trying to sound like an *** when I post this link, but I am heading out for a while, and couldn't dig through them all...
If anything, its just a good starting point to get an idea...

Hopefully its just old coolant and not oil. Although, digging into a head gasket job would maybe inspire you to do a little more work whilst there.

I would say that it's time to check the water pump or take it to someone who can. Your fan could be the culprit also. Has the truck ever been apart that you know of? I once bought a trans am from a guy that i flipped. The guy sold it for almost nothing because he couldn't drive it anywhere because it always overheated. I took it home and was going to go through the engine and see if I could find the culprit and it turns out that the fan was on backwards and was drawing air away from the rad instead of cooling it.

I have to ask this but did you bleed the cooling system properly? if not then that will cause an over heating condition due to an air lock in the system. I recommend running the truck with the front end jacked up a bit and the cap off...you may have to rev it up as these trucks normally run cool at idle. once there is no more air bubbles coming to the top of the rad top it off throw the cap on and take it for a tear.
