The odometer in the OH can be used as a number 1 or a number 2. The one might be used to track miles on a tank of gas, the other miles run on a trip, or over the course of a week/month/year/whatever?

The ET is an eraseable minute plus meter and it runs when the ignition is on regardless if the engine is on. Now our trucks do have a non-eraseable hour meter as wel that can be displayed on your dash temporarilyl. I forget the key sequence to get it to show up, though
and you are correct about the OH Odometer. You can use it for the tank or you can use it to measure a trip somewhere just like your dash one.
