20x9 SRT10 WHEELS WITH 285/50/20 COOPER ZEON LTZ
Best way to get height is the leveling kit, 2" will do. As for trimming, for 55 series... that's gonna be a lot. And even more or less depending on the offset of the 20s.
I was at stock height, with stock diameter tires, and a +13 offset (barely more than perfect, being +19) and still had to trim the inner mudflap lip to keep from rubbing. It also rubbed a bit on the front wheel well liner.
I lowered it and I haven't been able to trim enough yet to keep it from rubbing lol. But it will be the inner parts of the mudflap, lots of trimming of the back of the wheel well liner, and there's some sheet metal back there too that you might want to bend out of the way, it's easy to bend... and possibly trimming the front liner (or pulling it out of the way) and bumper cover.

For my 285/50/20's, I had to trim the front splash guards and front wheel well liners. Any bigger and you'll have to remove a good amount more of each of those, and also probably have to trim (cut) some of the front bumper fascia (that could be ugly). Some guys have even had to remove the front splash guards completely to fit larger tires.
The SRT10 wheels have an offset of 25mm, so with the 285/50/20's, you'll be rubbing the sway bar and frame at full turn, but just slightly. My wheels have an offset of 19mm, so it's pushed out just a touch further than the SRT's, and I only get a very slight rub of the sway bar and frame on one side only.
Bottom line, you'll be much better off going with 285/50's with a leveling kit. On stock suspension, you can only fit 265/50/20.
