Its understandable that a 180 stat will run at 190 to 195. A 180 stat will open at 180 degrees but the sensor that reads the temp is not right by the stat and the temp of the engine will be a lot hotter so a 10 degree difference seams normal to me.

this is my understanding also. The temp only designates when it opens, not what the running temp is going to be. After it opens, there is not much to stop the temp to continue to rise to it's running point, except the air going thru the radiator.. Heck, when towing, I see my temps raise much much more and I know my Tstat is opened.
