I've never run a true dual in my life, but that's not to say I disapprove of them. When I was a yungin' in the 80's and started welding my own exhausts (as well as other peoples) the one who kinda guided me the first time had me weld an "H" pipe when I did my '73 Nova SS. So, I always did at least an "H" even with a system that was dual right down to having two mufflers. Just the way I was taught, like I said, I have no clue whatsoever which is better, it's just the way I've always done it.
On my current truck, I've got the LT Headers going through 2 cats and don't meet until a "Y" just before the muffler (a one in/two out FM 50HD) so then it's back to 2 tailpipes.

well from what I was told with True duals you will lose low end torque unless you have headers.. I dont know if that happens with the H pipe or what but thats what the exhaust shop told me anyways.

I'm by far not an expert, but truely love muscle cars and sports cars and have enjoyed a few, and have many friends in the same circle. The "common" thought seems to be that you should always use an "H" or "X" pipe to help balance the pressure in both cylinder banks. I can't recall seeing a high-end exhaust setup for an 8cyl that didn't have this (though I have seen a few "redneck specials that have straight pipes welded with coat hangers...ugh!). In terms of pipes themselves, my limited lay-person understanding is that it all boils down to flow (CFM's). Your looking for optimum flow but need a little pressure to maintain torque (except on say a turbocharged engine where the turbo might provide the backpressure). All that said, if I were going from a single 3" pipe to a dual I'd probably consider using 2" or maybe 2.5" piple per side with an H pipe up front (not far after the cats). Maybe someone who knows more than I will chime in and can give better advice on pipe diameter in terms of optimum flow vs. backpressure needed for the 5.7L....

I've done true dual on my 71 nova and my 77k20 but i dont think it's a good idea to do unless you have 400hp plus.
