I am monitoring 2 different transmission temps but it still applies. You would just need to decide where to place the engine oil sensor.

Something with a 555 timer or a flip-flop? Are you going to have some kind of indicator so you know which sensor you are reading? Maybe have a SPST MC switch. Hit the switch and it cycles between sensors and, if no input for a certain amount of time, start cycling.
