07 Ram 1500 4.7l BAD OIL FILTER?
Upon further review...via myself driving and not my lovely wife. The check gauges does turn on at lower speeds, typically when turning, however the oil gauge definitely drops when this happens.
On a 4.7, the oil pressure sender is right near the oil filter. This may be what's leaking and what's triggering the check gauges. Try replacing that. Try to stick with Mopar. You can also rent a gauge and check the oil pressure, but you'll be in the same area and the switches (senders) do go bad....so might as well replace if you're there.

Replaced the Oil Pressure Sender/Sensor and have had luck for a couple days now. No freeway driving just yet. Still spot a small oil leak from the filter I think. Hard to tell. I wiped it all down prior to Sensor swap. Wife took it to Walmart and they put in Walmart exclusive FRAM (COD16ACC) Filter. Maybe that's the culprit. Anyone know torque specs for OIL PRESSURE SENDER or OIL FILTER.

Not sure there is an actual torque spec.... for the pressure sensor, I do believe that it uses pipe threads (tapered) so, tight enough it doesn't leak, but not so tight as to crack the housing it screws into.
Oil filter is just hand tight. Maybe one grunt.

Agreed. The Mopar oil sensor comes with sealant on threads, just a bit past snug would be fine. When I did mine, only thing I could fit on it was a small channel lock, due to the size and area (I have a Dakota with 4.7).
