I forget, have you flushed your coolant already? If so, you stayed with the same color coolant right? In other words, I hope you didn't mix green with orange/red or your coolant will turn into a gel like substance.
I would say that if your gauge shows hot, you either have a bad coolant sensor, fan isn't kicking in (although, I've always seen my temp gauge needle a couple hairs above the quarter warm mark during cold days), fan switch is bad (causing you to blow fuses), or your motor is just getting hot, lol.
The sensors are fairly inexpensive, I would start with those or a new coolant fill cap (aka radiator cap), if you don't have a good seal in the cooling system, it will allow the motor to heat up and eventually overheat.

Coolant is full again now but right before it shut itself off it blew some out of the reservoir. So now i just cant come up with exactly where to start.... Also my temp gauge usually runs right in the middle and ive never had any problems with my temp... I have driven about 60 miles before i changed the fuse and the fan came on but the temp is pretty much staying at the Hot... It kicked down but has now gone back up all the way...

Does your heater blow out hot air when the car has been running long enough to warm up?
Keep an eye on the resevoir. It should stay at the full mark. You may just have some air pockets in the system. Change out the radiator cap too or just look at the cap's gasket and judge it's condition.
Is there anything blocking the radiator? Does it have a lot of bent fins?
I keep getting this feeling that it's getting air into the system.

It blows out all kinds of hot air but the temp still dont drop... Nothing is blocking the radiator more than usuall. When i filled the reservoir it hasnt changed since then. But i figure i have put enough miles on it at the temp it says its running out to pretty much cook the motor but it still runs fine.. Since i changed the fuse the temp still rides at hot, the fan is working, i got hot air in the car, the car runs fine but it has me completely fooled...

the coolant temp sender is the sensor that screws in to the water inlet right behind the radiator cap it has one wire coming of the top just pop it off get a deep well socket to fit her pull it out and replace with a new one.. the sensor is the only one there with just one wire coming from top....

If it's really overheating you will smell things cooking, if it's running really hot you won't. I'd second the recommendation of a new radiator cap. Cheap and easy. Also, look for water or a milky residue in your oil. Just take the oil filler cap off and look at the underside of the cap, also look at the dipstick. If you have a bad headgasket, air from the cylinders can get into the cooling system making it REALLY hot. You will continually lose coolant, but slowly. You may or may not notice white smoke from the tailpipe.
