Looks like oil on your butterfly in that pic.

Hmm I'll check the oil, last time that I checked it, 2 days ago... it read as full... it was dark out though so it could have been me misreading it.

Oil level is fine.

results of mechanical gauge,

10 psi idle-warm engine- in park

25 psi at 2000 RPM - warm engine

it went down to about 6 psi when stopped and in gear that was after driving for a few miles

Drop the pan, and see if the oil pump pickup tube isn't choked with crap. If that looks ok, (or, even if it doesnt.....) replace the oil pump. I put a high volume unit in mine, and now have 60 pounds at idle on a warm engine.

is it easy to drop the oil pan on these trucks? I know on some you have to like lift the engine and stuff, is it just basically unscrewing the bolts?

if its a 4x4, disconnect the battery, remove starter motor (i just hang it over the control arms) pull the trans braces from engine to bell housing, remove inspection cover, pull the oil pan. Don't need to lift the motor. I changed my oil pump in about 2 hours.

Just thought I'd jump in here. I've got a 99 2500 5.9 with 220,000 miles. Runs good and after just spending 2 grand on a new trans, it drives good too. While messing around with the snap on scanner, I realized that my warm oil pressure drops to 7psi all the time as I come up to a stop sign. Kinda freaked me out because I plow with it and have several accounts.

I assume I have worn internals and am plannin a rebuild in the summer. Just read the posts by HeyYou and wondered if I could hear more about the oil pump swap...

It seems that the oil pump is going out, when you give it more rpms the light goes out. Trust the other guy and just change the pump!
