There are a lot of unknowns here, compounded by the fact that you just bought the truck and know very little about its mechanical history.
Therefore, you need to do a hell of a lot of tests on this vehicle, just like when someone with no medical records walks into the ER with a major complaint.
You have to examine just about every component that makes your truck go; plugs, wires, cap, coil, spark at plugs, crank sensor, cam sensor, TPS, air filter, fuel pressure, OIL PRESSURE (with a test gauge, as Hey You said), oil pressure sending unit, OIL LEVEL, compression, O2 sensors, IAC motor, everything.
And for all we know, the plenum gasket is completely shot, and it took just three days to plug your cat. Plugged cats don't rattle. If you're not already, familiarize yourself with the plenum problem, outlined in the "sticky" at the top of every page in this forum. Take off your air cleaner (and preferably the throttle body as well) and look inside the intake. The more oil there is in there, the worse the plenum gasket is.
Who did you buy the truck from? Dealer, private party, friend? Always nice to know why they sold it, and what they know about it - not that most people will admit to much.
And definitely don't go replacing the tranny until you get a handle on the condition of the engine. From the sound of it, it doesn't even run right when you're in neutral. When you start it up, how does it run when you're not in gear? Does it idle smoothly? Does it rev up OK? I know you said it would hardly go when you stepped on the gas, but was that just when it was in gear?
The more you can tell us about your test results, and how the truck runs in general (in neutral, in gear, at idle, when hot, when cold), the better.

Does the truck have good power when you shift it manually or does it just shift better? Sounds like the plenum Is blown and the cat has stopped up. Look down in the throttle body for oil pooling and if you are still running the truck, roll up under it while warm and put your hand close to the cat anf then the tailpipe. If the cat is stopped up that badly, the heat radiating from it should be exponentially hotter. Ive even seen them glow before
1a. Shifts better, it's not really catching anymore very well

Truck in idle has power allot of it moves truck side to side on around 3000 rpms
