That's your problem. These trucks do not like platinum plugs.

So I put the copper plugs in this morning I'm gonna change the cat later on during the evening but after I changed the plugs I went to clear the codes and the code came out misfire cylinder 7 so Im assuming it was those crappy plugs I'm gonna change the cat regardless so let you guys know what happens

Did you properly gap the plugs and also follow the wire routing procedure? If the plug wires aren't routed properly, cross-firing can occur, which will produce a misfire.

Out side of all that; when your going up the hill under light throttle increase does your truck drop down a gear or do you have to press the gas into passing gear?

I had the problem and I replaced my map sensor with a Delphi and it now drops down a gear under light throttle acceleration or when ever the truck starts to loose speed (Going up a hill and no throttle increase) that's how it should act.
if i'm making my explanation clear enough.

Also when you make a turn around 10-20 depending on the speed the truck shoudl drop down gear.. if MAP is not sending proper signal and/or reading properly (this is typcially the case- not reading properly ) it wont and you have to mash the gas to getmoving.

Also plenum and basic tune up.

Well my truck down shifts by itself but it stays the same speed even if I give it gas it struggles to get spped if I mash the gas it will probably stay the same but wont go any faster

Check your cat. And the plenum.

Truck runs great alot of power! The cat was really clogged it was all broken and looks like the center was melted or something but whatever the trucks great and Im happy. Thank you guys for all your help I really appreciate it

Mine was like that...sounded like a tin can inside the cat at idle and a certain RPM.
