Default Bucking Truck Crank Position Sensor?

Hey Guys I was wondering to get a couple of opinions or inputs before I go spending money on sensor(because they arent cheap)
I dont know if my problem would be the Throttle Position sensor or if it would be the Crankshaft Position Sensor, Fuel system or something completely different. I just replaced the coil, wires, plugs, Dcap and rotor.
Here is whats going on:
Some days it will do it and other days it wont, have recorded and temperatures are not consistent to when it does it. I can drive it for a couple 5 minutes then it will start bucking and acting like is going to die. Ill floor it and it will slowly speed up then it will quick. Some days it will only do it once at the beginning and other days it will do it constantly. Somedays it will do it going up hills sometimes no. I also feel like my throttle response and acceleration is **** poor.
Im just not exactly sure and what to get some opinions/Advice before I start spending money and chasing the problem still a couple hundred dollars later.
I have a 95 5.2 5spd 4x4
Thank you guys

Our trucks don`t have a Mass Air Flow Sensor, could it be the MAP sensor that you replaced ?.

That would be the IAT referred to be jcorror in his post...but you said you replaced it and this problem is still there? The next most likely culprits are the TPS and crank position sensor, but these types of problems are very hard to track down with no trouble codes from the pcm...

I know, I was wondering if someone would have a guess of which one or both, just so I wasnt chasing parts.
Could a blown Plenum cause that too?

A plenum issue usually results in misfire codes, oil loss, and shaking in overdrive...and you said that there are no check engine lights after you replaced the IAT sensor correct? maybe try removing/unplugging your front O2 sensor and see if the truck still does it...the computer will complain but it might allow you to rule out bad O2 sensors/cat....other than that it's kinda like taking shots in the dark without any obd2 codes to go off of
