This may sound a little silly but is all the mod does is cool it a little? Am I missing something here?

Love you personality Pappy!!!
My understanding is that the cooler temp tricks the computer into thinking the engine is still warming up and gives you a richer fuel mixture. Should result in a little more power and a little less mpg.

Wouldn't a "rich" mixture use more fuel? I own Nitro powered RC trucks and if I run my RC Truck rich it will suck down fuel.

Yep, exactly. First I heard of cooler thermostats installs was as part of a turbo/supercharger mod. The thermostat was added tohelp you get more fuel to maximize the increased airflow of the turbo.
