O/D off means exactly that. Just knocks out the last gear, not 2, just one.
Wrong...it's in the manual man. What you said doesn't even make sense...both 4th and 5th are overdrive gears so why wouldn't o/d eliminate both? Easy way to solve this...push o/d off then hit the highway you'll be in third the whole time. Same goes for tow/haul...you'll hit 4th eventually but it takes a little bit. The downshift doesn't have anything to do with the brakes...at closed throttle if you are gaining speed it'll downshift.

That is correct. My 08 works just as the manual states.
Tow/Haul = higher shift points at part throttle 2-3 and 3-4 with 5th locked out at any speed.
OD OFF = No 4th or 5th gear at any speed.
