Stock Tires
Like I said earlier you don't need to change the ratio to get a taller tire, just increasing the width will also increase the height. I think 285/70r17 would be a good tire at 32.7" tall and about 1.1" taller than stock. Also you don't need to get the light truck tires unless you need them for their load rating otherwise go w/ the P285/70r17.

A big reason for the difference in price between sizes isn't so much the "demand" of the tire, but rather the specs of the tire. You gotta be mindful of the specifications. In some cases the much less expensive tire is NOT a LT (light truck) tire but is rather a P (passenger car) tire and as such will not have the same ply rating or load handling rating of the more often times, more expensive tire within the same lineup.
Also, a "P" tire will often not have near the same tread depth that the same tire in an "LT" will.

I got my NTGs (295/70/17) from discount tire. They were $927 out the door. I had shopped around online but by the time I paid shipping and then took them somewhere to install them it was about the same price. The only catch was that discount tire doesn't do alignments. So I had to take my truck to RPM Automotive to get the alignment done. They had a deal with discount tire where it only cost me $69 for a 4 wheel alignment.
Local tire store, but I know the guy pretty well. I got a few sources for tires.
One of my hunting club buddies' step dad owns two tire and auto repair centers up in south Ga., I've done their computer work and networked the two location together when he bought the second one. So we "barter" a good bit. I actually got my 35" Cepeks from him for my old 33" Mickey Thompsons with 19k miles on them (also originally gotten from him along with my Classic II wheels) and a days computer work labor. No money out of pocket. Sometimes it's hard to beat the good old barter system.
Now I thought I was gonna have to go back to him for the Nitto's, but I had a cancer scare with mom right after I finished lifting the Jeep and thought I wasn't gonna be able to go back home to Ga. for a while. Turned out to be a false alarm with mom, the cancer did not return, just a benign tumor. But I had already made an inquiry into the Nittos here.
Turns out because of the deal the guy was willing to give me, it not only beat anything I could get off the internet, but because he's the mgr of a large chain tire store (high volume), he was selling me the Nittos for cheaper than my buddy could get them for in Ga. My Georgia guy's regular distributor doesn't do Nittos, they do Toyos, seems since they are owned by the same company, distributors carry one or the other and Toyo prices are higher than Nitto for some reason.
I've since sent a couple people who live in the area his way, so I'm building a little rapport with this guy too. Never hurts...

Ok I gotcha, when I'm back home I will stop by some tire stores and get some quotes just to ballpark a price range, great news to hear that your mother is doing well also! 
edit: discount tire has them listed for 168/tire, which IMO can always be worse lol, I'll keep looking around though, thanks for the help Hammer.

Hammer is right about the ply rating being different between the "LT" and "P", but many light duty pickups like the ram 1500 come w/ the "P" tires (mine had michelin P245/70r17's). Mine lasted 7 years, splitting mileage between my truck and my bike. I just replaced them at 41k and they probably would have been okay for another 1000 but I wanted a little more tread on the off chance that we have a bad winter.
On the P285/70R17 tires, the width is 11.46in and on the LT285/70R17 tires the width is 11.5in, the heights won't be a problem to clear as they are 32.75in roughly. However, do you think due to the width there will be rubbing issues at stock height?
