Ok so now I'm noticing that when the gas pedal is all the way to the floor the throttle isn't even close to wide open. However there isn't any slack in the throttle cable? Is there a way to adjust the throw of the pedal? It goes from idle to maybe half open and I feel like that could be the issue

Check down at the pedal, the cable may have stretched.

There's not much slack in the cable. When I start pressing down on it there isn't any lag before it starts opening up the throttle. Just seems like the pedal isn't able to move enough to open it all the way

Look down the throttle body, and see how far the throttle blades are actually opening.....

Pedal doesn't seem adjustable. Hit the floor and that's where the throttle maxes out, no slack in the cable. Kind of stumped. Thinking about bending the pedal up to give it more throw? I do have a little bit of rubber mat glued to the floor under the pedal but that's only like 5 millimeters thick.

If there is no slack, can you bend the pedal without having it crack the throttle open???

No cable slack at all. Second I start pressing the pedal the throttle starts opening just doesn't open all the way before the pedal is on the floor. I don't really see a solution other than somehow raising the pedal so it sits higher at idle.

I'm stumped boys

Probably gonna have to heat that to bend it without breaking it......
