+1... you are going to have to eliminate (troubleshoot) one thing at a time. Might as well start with fuel pump as stated. You'll need an inexpensive fuel pressure tester to do so properly. I'm thinking crank sensor or pcm though. But don't start throwing money at it. Buying a few diagnostic tools is money well spent for now and in the future.

If the truck dies on you after driving a bit then you should try this, crawl under the truck with a rubber mallet in hand to CAREFULLY, DELICATELY, CAREFULLY, KINDLY, and GENTLY tap and "Bang, Bang, Bang, Bang, Bang", as said by comedian John Witherspoon, on the fuel tank in its middle section directly under the fuel pump, being careful not to crack a hole in the tank or break a piece of your mallet off in your fuel tank, and see if the vibrations help ease the problem. For a while this is a temporary fix, however in the long run the pump will need to be replaced. This is just a simple backyard solution/check to finding a cure for the issue if in fact the fuel pump is the cause.
+1 on local parts store loaner fuel pressure tester.
This is the professional approach, it is more time consuming but it is the most accurate way to identify what is going on with the fuel pump, fuel pressure, and volume of fuel in the system.
Download the 2001 service manual, go to the library to get the book on your truck, or buy the book for 20 bucks which is specific to your vehicle and use the instructions provided to accurately troubleshoot and diagnose your vehicle so that you can fix it without losing your sanity.
Test the fuel pressure being produced by your pump using the instructions from the book and if that isn't it, move to the next section that relates to the issues you are experiencing, otherwise woe unto you...

What brand fuel pump? Did you check fuel pressure yet? Did you disconnect negative battery cable when replacing the crank position sensor?
